Can I send people that click on my ad to a Youtube Video / Channel?

Yes this is possible.

To do this you just have to enter the link of your video/channel as the "Final URL" inside AdWords.

For your channel you can also use a fancy link like this: www.youtube.com/subscription_center?add_user=YOUTUBE_USERNAME which will create a little subscribe popup when they click on your video ad.
